The holidays are time of year for gathering family and friends to celebrate. But it is no celebration if you are stuck in the kitchen and everyone else is in another room socializing. I would like to share an easy recipe that can be used to feed holiday breakfast guests or just give you more time Christmas morning to enjoy the festivities. Enjoy!
1/3 cup milk
2 (10.2 oz.) cans refrigerated biscuit dough
1-1/2 cups diced, cooked ham
1 cup shredded Colby Jack Cheese
1/2 cup (total) diced green and red pepper
Heat oven to 350 degrees Fahrenheit. Spray a 9×13 baking dish with cooking spray.
In a large bowl, beat eggs and milk together.
Separate dough into 10 biscuits and cut each into quarters. Stir biscuit pieces into egg mixture to coat then fold in ham, cheese and peppers. Pour mixture into prepared dish ensuring that biscuits are in a single layer.
Cover and refrigerate overnight, if desired, or bake immediately. Bake for 22-25 minutes or until golden brown and eggs are cooked. Cut in to squares and serve.
